THE BREAKFAST DIARIES
When I say “I love breakfast” I MEAN IT. It’s my absolute favorite. Here are a few favorites I have on rotation.
This was my summer staple. A nest of zucchini from my neighborhood CSA, melded together with fresh grated parm, an egg in the base, and topped with chili crisp. Don’t mind the pan. We were all new to stainless steel at one point. ;)
Forget poor man's lobster. Meet the single lady's Shakshuka. Using leftover tomato paste, a sunny side up egg, curly parsley and some feta.
My first attempt at recreating my favorite chia custard with blueberry compote from The Dovetail Cafe in Duluth, Minnesota.
A favorite around here. Kimchi toast, fried egg and a side of fruit. Kiwis are great.
This is a nostalgic breakfast for me (we were a post-chores, pancakes & bacon Saturday morning fam). I added my own flair with an orange juice americano.
Kimchi toast reigns supreme. Paired with pineapple to boost immunity, a honey and lemon tea, and a shot of espresso over ice (still needed some energy).
I mean, what more can I say besides "Look at that blood orange!!"
